This Thursday is actually Cinco de Mayo, the commemoration from the Mexican armys victory covering the French in the Challenge of Puebla. Although the vacation is not widely famous in Mexico, Americans currently have embraced it, using it for an excuse to enjoy much of our fair share of fiestas it week.

Bens Chipotle Lime green Shrimp Tacos

Ingredients:

  • 2lbs medium sized shrimp
  • 3T olive oil
  • 2 limes
  • 1T Chipotle seasoning
  • Coarse seashore salt
  • Garlic powder
  • 1 bundle cilantro
  • 1 avocado
  • pink onion
  • 8 tortillas
  • Sour cream
  • Cotija cheese
  • Chipotle Tabasco sauce
  • Pico de Gallo (see recipke below)

Directions:

  1. Peel plus de-vein shrimp, if not already cleaned
